You can top this delicious and moist cake with a cream cheese and maple syrup icing or omit the icing and eat it with butter.

IngredientsMakes: 1 cake
- 115g butter, melted
- 150g caster sugar
- 115 g dark brown soft sugar
- 2 eggs
- 1 teaspoon vanilla
- 4 tablespoons milk
- 250g self raising flour
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon mixed spice
- 1 pinch salt
- 2 bananas, mashed
- 125g grated carrots
- 90g sultanas
- For the icing
- 3 to 4 tablespoons maple syrup
- 2 tablespoons butter, softened
- 200g cream cheese, softened

- Grease and line your loaf tin. Preheat oven to 180 C / Gas 4.
- Mix your melted butter and sugars until all combined.
- Add the rest of the ingredients and mix until combined. Pour into your tin and level out.
- Bake until a tester comes out clean, about 40 minutes. Remove from the oven and let cool.
- Once your loaf is cooled mix your cream cheese maple syrup and butter until smooth. Smother the top of your loaf with it.
