Because I have a 9-18 work schedule at work and I know that my family is waiting for us to eat dinner together, I often call my daughter to start her food (for the simple stuff). When I know I want to make pasta, I call her from the car and ask her to boil salted water. When I get home I can throw the pasta in the pot with boiling water and while they are boiling I take care of the sauce. The word comes to the sauce as it is very simple here. It resembles carbonara pasta but baked pasta also has sour cream (see here the original recipe for Pasta a la carbonara ).

The cheeses used can be various: telemea (preferably mixed with eggs and sour cream), feta, mozzarella, stronger cheeses (I used Cheddar and Montesino), parmesan, etc. They are good and mixed, from & # 8222s leftovers & # 8221 from the fridge. Grating succeeds better with cheese than with telemea (it does not melt much but dries more in the oven).

I knew I had a stew boiled in the fridge (deboned and rolled in plastic wrap) and I wanted to use a few slices of it (and I did well!). Of course, the ham can be replaced with pieces of bacon, kaiser, ribs or smoked bacon. You can also use mushrooms hardened in butter or cheeses with noble mold (Roquefort, Gorgonzola, Stilton etc).

The classic American recipe for these mac and cheese (you can find it here) involves the preparation of a sos Bechamel with cheese (called sos Mornay). I simplified it a bit.

V. The tortellini are drained but kept in the water in which they boiled, it may be necessary to thin the sauce. Serve hot, with a little olive oil, mozzarella sauce, grated Parmesan cheese, finely chopped dill and a little ground pepper.


Cheese pies

In a bowl, mix 1 kg of cheese, 3 eggs, 1-2 tails of green onion and a few dill sprigs, season with salt to taste.

Spread a sheet of lava, put a few pieces of butter, add the cheese filling on the edges and roll.

In a bowl, combine 3 eggs with 3 tablespoons of sour cream, mix until a homogeneous composition is obtained.

The lava roll is cut into smaller pieces and arranged on a tray greased with oil. Grease the pies with the mixture of egg and sour cream.

Bake in the oven, at a temperature of 180 degrees C, until nicely browned.

Ingredient (1 serving large):

200g tagliatelle pasta (you can also use spaghetti)
150g sour cream 20-25% fat
1 egg yolk
50-70g grated cheese (I put the house)
salt pepper
70g ham, kaizer

Bring water to a boil for pasta. Cut the ham into squares and fry it in a little oil. In another saucepan mix the yolk with the cream and then put the pan on the fire, mix until you get a slightly thicker sauce (always stir, without fear of cutting). Add the grated cheese, mix until it melts and then add the ham.

Season and ready with the sauce. Meanwhile, the pasta has boiled, drained and mixed with the sauce.

Serve hot.

Although I eat more pumpkins in summer, they are not missing from our family's menu even in the cold season. They have few calories. With a very high water content, they are also perfect to eat with the peel (in the peel are a lot of nutrients needed by the body). It is one of the vegetables with a high potassium content, with an important role for the heart and brain. Zucchini are rich in minerals (potassium, phosphorus, magnesium, iron, zinc, calcium, copper), fiber (perfect for the intestines) and vitamins (A, C and B).

Try to use thin (young) pumpkins. You can use both local and imported zucchini with a dark green or yellow skin (zucchini), but also a variety with striped skin.

INGREDIENT:

3 cloves garlic chopped with a knife

400 ml cooking cream (32% fat)

100 g sour cream fermented 24% fat

a few chives (chopped onion)

a few strands of green parsley

1 sprig of green oregano or 1/2 teaspoon dried oregano

1 teaspoon grated onion flakes

100 g parmesan (or other type of hard cheese finely grated)

hot pepper flakes & # 8211 just for flavor

The first thing I did to prepare these pumpkins in parmesan cream sauce was to turn on the oven at 200 ° C, so that when I finish the preparation steps I will not waste time preheating the oven.

I washed the pumpkins, wiped them, then cut them into 4-5 mm slices and salted them. I left the slices scattered (not one on top of the other) for about 15-20 minutes, then I wiped each slice of water and salt.

In a bowl I mixed the two types of sour cream with chopped greens, very little salt, freshly ground pepper, onion flakes and hot pepper flakes (as I rotated the grinder twice).

If you eat spicy you can add hot pepper flakes to your taste.

While the pumpkins were salted, I melted the butter in a large pan, then sautéed the finely chopped garlic for about 15 seconds.

I put the sour cream, prepared in a bowl earlier, over the garlic and let it boil for a few minutes (about 2-3 minutes).

I turned off the heat and added the Parmesan cheese. I mixed until the composition was homogenous.

I arranged the pumpkin slices in a tray (you can use any type of heat-resistant form), then I poured the Parmesan cream over the pumpkin.

I baked the pumpkins in creamy cream and parmesan sauce for 45 minutes (let them soften and brown slightly).

Baking time may vary depending on the power of the oven.

As you can see, the recipe is extremely simple and easy to prepare.
